Once upon a time, in a far away land called Niagara-on-the-lake, Dave Gibson discovered his interest in wine; how wine is grown, how it is made and how darn yummy it is.
It’s been over twenty years since I opened the doors at Berkshire Wine Cellars. Lots of wine has gone out the door and many changes have occurred too but the focus has always been to make excellent wine at an excellent price.
Today you can find wines of all styles, prices and quality as well as apple cider, flavoured ciders and more recently delicious sparkling wine. Many awards have been won for wines made right here. Craft your award winning wine here, it only takes a few minutes to get started and then a few weeks down the road, about 20 minutes to bottle. When you come in to make your wine, we help you select a wine that will suit your taste as well your budget. There’s lots to choose from. We keep a good stock of all the popular products and if we don’t have the one you want, it’s easy to order in. Almost everything is available to our industry, we just can’t stock it all.
Once you’ve chosen your wine style, we’ll pour it into the fermenting bucket for you. You add the yeast to start the fermentation and we’ll do the rest from there.
We book you to come back when your wine is ready, usually 4 to 6 weeks. You can save your own bottles (be sure to rinse the last wine out of the bottle) or we sell new bottles. On bottling day you will sterilize your bottles with our simple system (see the video) in just a few minutes then fill and cork your wine, finish the bottle with a label and a shrink cap if you choose to have a professional look to your wine, then you’re all finished.
You may want to start another wine that day so you always have aged wine on hand. Depending on the product and style of wine you choose, your wine will benefit from just a few months to up to a year in the bottle before you open it. Most wines really benefit from 3 or 4 months in the bottle. Don’t despair, you can drink it sooner but it is much nicer with some age.

Making cider only takes about 2 weeks and it is drinkable right away, no ageing necessary. Actually when you bottle it, it’s at the perfect serving temperature……icy cold!
